Crystal Jade Ginseng Chicken & BBQ Restaurant Imperial Hotpot with Assorted Vegetable (Kimchi)

It has been a good 10 years that Crystal Jade offers its popular Korean cuisine – namely the Korean Ginseng Chicken and Korean BBQ treats.  Diners can continue to be pampered by its comforting Korean cuisine in its newly relocated premise to Basement 2 in Ngee Ann City (more affectionately known as Takashimaya).  The new outlet is spanking new and more cosy for diners.  The restaurant also now offer new healthy and wholesome dishes such as the pictured Korean Imperial Hotpot with Assorted Vegetable ($39 per serving) that comes with a choice of beef, pork or chicken.  I had the kimchi broth which has been laboriously prepared through slow boiling over a few days to render the thick and rich flavour.  Good for 2-4 person per serving, order some fresh Korean Handmade Noodles ($3/ serving) for a complete experience.

These side dishes at $10 for 6 varieties are made fresh daily using traditional methods and secret recipes honed over the years.  I particularly omelette with seaweed, chilled chestnut jelly with spicy chilli and deep fried tofu with a coating of egg.

Made with 4-year-old ginseng root, fresh chicken, glutinous rice, red dates and gingko nuts is this nourishing Korean Ginseng Chicken Soup.  This soup is not called “Authentic” for nothing as it is very uplifting and gives a warm and comforting feeling.  Although I never have tasted the original ginseng chicken soup from Korea, but I like this one that has the soup and chicken sealed with the aromatic herbal flavour of the ginseng.  A traditional treat in summer to fight the heat, it is believed that this dish has rejuvenating and detoxing effects.

Top grade beef short ribs are meant only for the royalties because they are the best grade meat that are served only during significant and celebratory occasions.  We are lucky that it is available commonly for us to enjoy.  Prime Australian beef ribs are used here, and tenderly braised for several hours with many condiments: rock sugar, pepper, sesame, red dates, ginger, garlic, apple, pears, carrots and radish.  The outcome from the hours of low heat simmering is such tender beef short ribs that made me reach for the last piece in the claypot.

One advantage of dining in Crystal Jade Ginseng Chicken and BBQ Restaurant is that you can have a choice between having a steamboat or BBQ, or both!  The table can interchangeably turn into fire for steamboat and BBQ!  The new Imperial Hotpot above is how it is before the broth is put in.  Look at all the vitamin goodness from the variety of vegetables.  This dish was voted as one of the favourite amongst the diners with me for the night!  The kimchi broth we tried was awesome.

What is a Korean dining experience without barbeque?  We had the marinated beef short ribs, ox tongue and pork collar.  These three items are the amongst the most popular BBQ choices.  I was actually quite surprised to know that people do enjoy ox tongue.  Although not the first time I had this, however there is still a certain feeling of oddity when I chew on this slightly crunchy-textured offal.  A noteworthy mention is the specially fitted grilling stations with vacuum capability on the side of the grills that takes away most of the fumes away from under the table.  That way we can leave the restaurant without the stinking stench of BBQ sticking to our clothes and hair after a delightful meal.

I don’t know how many people will actually go to a restaurant for dessert?  I probably will with this Double-Boiled Snow Pear with Chuan Bei and Dried Longan.  This is a very refreshing dessert that is chilled to perfection.  Known as “baesuk”, this is a good remedy for colds and coughs.  Given that I just recovered from a cold lately, this would have been a very apt dessert for me to nurse myself back to health.

Although there are many Korean restaurants sprouting out all over the city in recent years, their growth however still isn’t as strong as the Japanese counterpart.  But for 10 years, Crystal Jade has managed to keep the tradition of the Korean spirit going and serving some perennial favourites for a decade already!  This short history though, is a testament to the good quality meals it served up and the good dining experience it provides for families or businesses diners.  And remember that the next time you head over to Crystal Jade Ginseng Chicken & BBQ Restaurant, they are now located at Basement 2 of Ngee Ann City (Takashimaya).
