Nasi Briyani is a very heavy meal for me.  Not only does it comes in very big portion, the meat; usually chicken or mutton; comes in one whole big chunk.  Commonly, it comes with one or two side dishes and hard-boiled egg.  It makes a very complete meal.  It is not only heavy in portion, it is heavy in taste.  The spiciness of the curry used in Indian dishes are more flavourful compared to our Chinese curry.  Once in a while I do like to indulge myself with a plate of Briyani.  Makes me feel satisfied but sinned at the same time.

In most Nasi Briyani, the papadum; which is a thin disc shaped cracker usually comes as a set, usually consumed before the start of the hearty meal.  I like the lightly salted papadum which is light in taste and very crispy.

Briyani was first introduced to Singapore by the Indian Muslim and Arabic diasporas.  The name biryani is derived from birian, which means “fried before cooking” since the traditional process of cooking involved frying the rice in ghee or clarified butter before cooking it in boiling water.  Usually the basmati rice; a long grained rice; is used in Nasi Briyani.  The cooking process gives the rice a nutty flavour and prevents the grains from clumping together.  In Sakunthala’s Food Palace, they have two kind of rice.  One is the one pictured above which is cooked in chicken stock giving the rice a richer flavour.  Another one is white in color cooked in spices which is suitable for vegetarian.

Sakunthala’s Food Palace is named after the owner’s mother, Sakunthala which translate into “Princess”.  Founded in 1997 with its first branch in Dickson Food Garden, Sakunthala is now operated by four sibilings and is only open at night.  Sakunthala use only high quality, fragrant briyani rice and are served with raita (an Indian condiment made with yogurt and seasoned spices), dalcha (an Indian stew made from mutton and lentils), timon achar, and chicken curry on the side.

Sakunthala’s Food Palace is the top voted stall for the Nasi Briyani category for Singapore Food Festival 2013.

You can savour the 20 voted favourite stores voted from the online polls at the Singapore Food Festival Village to be held from 12 to 21 July 2013 at Bayfront Avenue (near Bayfront train station, Circle Line).  This 10-day festival is organised by the Singapore Food & Beverage Alliance to celebrate Singapore’s unique food heritage and pays homage to local culinary heroes.
